A shrub.

Not a mocktail. Not a juice. A drinking shrub — a botanical concentrate built on fruit, sugar, and vinegar. Mix it with sparkling water. Add it to a spirit. Or drink it straight.

Third Exit Past Town is Raspberry, Lemon, and Thyme. Those three things, taken seriously.

Slow. Deliberate. A little obsessive.

The thyme goes in first — steeped into turbinado sugar before the fruit is introduced. Raspberry is acidic, and acid suppresses botanical extraction. Thyme gets its time alone.

Then the raspberries are added and mashed in. Lemon peel follows — not juice yet. The oils in the peel do something different. The whole thing macerates slowly.

After straining, champagne vinegar and fresh lemon juice are blended at ratios calculated from the actual yield of that specific mash. Each batch is slightly different. Each blend is calculated fresh.

Third Exit has a naturally low pH — the same acidity that keeps it shelf-stable for six months. Refrigerate after opening. Consume before storing things starts consuming you.
